- 225gr butter (roomtemperature)
- 150gr caster sugar
- 225gr flour
- 4 eggs
- lemongrater of 1 lemon
- 2tbsp lemon curd
- 1tbsp honey
- juice of 1 lemon
- 3tbsp powdered sugar
- little bit of water (if the mixture is too thick)
Preheat the oven at 180 ºC (350 ºF). Mix all the ingredients for the cake in a bowl until everything is incorporated. Grease the cakepan with butter and pour in the cakemix till evenly spread. It's quite a heavy mixture, so you might need to spread it out with a spatula.
Place the cake in the oven for about 50 to 60 minutes or until golden and a skewer inserted into the middle of the cake comes out clean. Don't get the cake out of the cake tin, or it might break (it's really heavy because of the lemon curd).
While you let the cake cool down, let's make the glaze. Warm the ingredients for the glaze in a pan on medium fire. Keep stirring and make sure it doesn't cook! After 3 minutes you should have a clear syrup.
Poke some holes into the cake with a skewer and spoon the glaze over the cake. Let the cake cool down completely before removing the cake tin and slicing.
